Egg Noodles - Indian Masala

My favorite Egg Noodles in Indian Masala Style - My all time favorite.Ingredients:Noodles- 1 packEggs - 3Cabbage- 1 cup shreddedBeans or any mixed vegetables chopped- 1 cupGarlic- 5 pods -Finely choppedOil- 3 tbspOnion- 1 Green Chilly-2Chilly Powder- 1 tbspGaram Masala- 1 tspSalt as per tasteWater for boiling noodlesMethod:Egg Noodles - Indian MasalaIn a wide kadai add water sufficient enough to boil noodles.
I have used 1 liter. Add salt to this boiling water and cook noodles for 4 min sharp.
Drain noodles and wash them under cold water to prevent sticking.
Heat 3 tbsp oil in a wide wok.
Fry finelly chopped garlic and green chillies.
Add cabbage and vegetables and fry well till cooked and crisp.
Egg Noodles - Indian MasalaAdd chilly powder, garam masala and fry well till the raw smell goes.
Add cooked noodles and mix well till masala gets evenly coated.
Egg Noodles - Indian MasalaAdd eggs and mix gently till egg get well coated on noodles.
Now simmer the flame and keep the noodles cover and cook for 2 minutes.
Open the lid, stir gently and cook covered for 3 more minutes.
Now the coated eggs would have cooked completely.
Serve hot with soy manchurian.
