Cucumber Tea Sandwich

Today's recipe is very very simple with just few ingredients. Many of you might even think that this sandwich doesn't really need a recipe post because it's that easy and simple.
Cucumber Tea Sandwich All you need is green chutney, cucumber, cream cheese (or thick curd) and bread slices. With all the sandwich breads that I have been making, I was looking for simple sandwich recipes and I landed on this post by Sala @ Veggie Belly. Her clicks make you want to grab a sandwich right out of the monitor :-)
Sala says that these sandwiches are perfect for picnics, but I think they are perfect for any time of the day or year. I had this as my afternoon snack. I think a slice of cheese would not be out of place in this sandwich.
Cucumber Tea Sandwich Recipe adapted from Veggie Belly:
Ingredients: Makes 2 sandwiches Bread Slices - 4 (I used homemade semolina bread)
Cucumber - 1 small, thinly sliced
Cilantro-Mint Chutney - 2~3tbsp or as needed
Cream cheese - 2~3tbsp or as needed
Method:
  • Spread mint chutney evenly on one side of the bread slice. Arrange the cucumber slices evenly on top.
  • Spread cream cheese evenly on one side of the other slice. Place that slice on top of the cucumber slices, press lightly. Cut the bread diagonally and serve right away. Repeat with the remaining bread slices. Enjoy!!
