Coconut Lime Cauliflower Rice with Grilled Sweet Chilli Chicken

Every now and then an everyday family recipe comes around that is sensational, and this one from Kristin, at Iowa Girl Eats is that one. Its a great grilled, healthy, family meal and hands down the nicest I have eaten in a long time. Thanks Kristin for letting me use your images and share this amazing recipe, its an absolute must-try for everyone.

Cauliflower rice is becoming increasingly popular as an alternative to starch, and with the right additions to the mix, you would never know you are eating cauliflower, so even the children will love it. This recipe with coconut milk and lime is amazing. Make the rice by chopping the cauliflower through a food processor fitted with the grating attachment, or if you don't have one use your normal box grater . I used lemon instead of lime, as my tree is once again overflowing with them, and I added chilli to the cauliflower rice, as my family is mad about chilli. I used a whole head of cauliflower and could have used two, because its fantastic the next day as a salad.

The Chicken breasts marinated in lemon, sweet chilli sauce and coconut milk were deliciously tender and grilled to perfection on the barbeque. I honestly cannot explain how amazing this meal was. You really have to try it for yourself, so head over to Iowa Girl Eats and get the full recipe.
