Cinco De Mayo!

I love how America is a melting pot ~ a blending of so many different cultures, faiths...and food.  I mean, seriously ~ Cinco de Mayo is a victory of Mexicans over the French in the 1860's and it's somehow become a social event for the generations, Mexicans and Americans alike!
if you've been following me for a while, you can likely tell I'm a huge Mexican food fan.  I've even posted my guacamole recipe...and tonight's a night to whip it up and party!
Here's my recommendation.  Grab some Patron (Silver or Gold) or Avion, Entourage style.  Get some fresh limes, some pineapple juice and some low ball glasses filled half way with ice.  Pour the tequila about halfway up the glass, add a splash of pineapple and some squeezes of fresh lime juice, and enjoy!  It's called the "Tipsy Vegan" (thank you to my friendly bartender at the W in Seattle who helped me decided what to name it) and it's perfect for tonight along with your favorite chips and salsa.  Or, get some 6" corn tortillas, spread each one with a little vegetarian refried beans, top with Daiya cheese and pop in the oven until gooey.  Then top with sliced avocado, shredded lettuce, fresh corn kernels and some non-dairy sour cream and salsa on the side for garnish.Grab a friend, serve up some easy-to-make (or buy) yummies and enjoy ~ SALUD!
