Chili Lime Chicken Kabob 

Some good news for chicken lovers, especially kabob lovers. This lovely chili lime chicken kabob recipe is a perfect on any great summer day, one dish that is just perfect to impress your loved ones (IMHO: I guess only for kabob lovers). It is both simple and easy to make and most importantly it is mind blowingly delicious. Whether you are a newbie or a pro on the kitchen floor you won`t have a problem making this chili lime chicken kabob recipe. This dish is perfect for chicken lovers of all ages. This chili lime chicken kabob recipe can be enjoyed on its own as well as with any meal (e.g. your healthy lunch meal), goes best with any type of salad as side dish.

Ingredients

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons (low-sugar) red wine vinegar
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 pinch cayenne pepper, or to taste
  • salt to taste
  • freshly ground black pepper to taste
  • 1 pound skinless, boneless chicken breast halves – cut into 1 1/2 inch pieces
  • Assorted Bell Peppers and onions, cut into chunks

Directions

  1. In a large bowl combine the olive oil, vinegar, lime juice.
  2. Measure in the chili powder, paprika, onion powder, garlic powder, cayenne, salt and pepper.
  3. Whisk until the oil and vinegar are emulsified.
  4. Add chicken cubes to the bowl.
  5. Cover and place in refrigerator for a few hours.
  6. Thread chicken on to skewers, alternating with the peppers and onions.
  7. Grill the chicken over medium high heat for about 10 minutes or until the juices run clear.

Enjoy!

NB: If you only like meat than just add the chicken pieces to the skewers and leave out the vegetables.
