Chicken Alphabet Soup

When Monkey Girl was little she was such a picky eater.

I honestly blame that on my mom.

She took care of three of her grandchildren and each day she made them three different meals. She also did something that I swore I would never do, introduce her to Barney.  You know Barney, the annoying purple dinosaur? Boy was I ticked over that one.

But I digress.

I often made this soup for Monkey Girl. You see, like so many other parents, I did what I could to sneak in some vegetables. It depended on the day of the week as far as the carrots go. But to this day she loves corn and asparagus. I add these little alphabet pasta and we made a game out of it. You can substitute any vegetables that your little, or big kids enjoy.

I do not know a child that doesn’t like to play with their food. Mine is no exception.

Chicken Alphabet Soup

Yield: 10 servings

Prep Time: 10

Cook Time: 30

Total Time: 40

Ingredients:

3 medium carrots
3/4 cup chopped sweet onion
1 tablespoon olive oil
2 quarts chicken stock
3 cups cubed cooked chicken breasts
1/4 teaspoon thyme
1 1/2 cups uncooked alphabet pasta
1 8 oz can drained asparagus
1 8 oz can corn drained

Directions:

In a dutch oven saute the carrots and onions in the olive oil until tender about 10 minutes. Stir in the broth, chicken and thyme. Bring to a boil. Stir in the pasta and reduce heat to simmer cook uncovered for about 10 minutes or until pasta is tender. Add asparagus and corn cook another 2-3 minutes or until vegetables are heated through.
