Chicken Adobo

chicken adobo is One of the most popular and traditional dish in the Philippines and often regarded as a national dish.Adobo is the spanish word for marinade, sauce or seasoning and being colonized by Spanish for about 400 years, this dish has been adapted by the Filipinos as their own.
Serves 4-5
Ingredients
1 kilo Chicken, cut into serving pieces
1 cup white vinegar
1/2 cup soy sauce
1 onion (medium), thinly sliced
4-5 cloves of garlic, crushed
2-3 bay leaf
6-8 pcs black peppercorn
1 tsp salt
1 tsp sugar
1 cup water
1/4 cup oil
1 medium potato, cut into cubes (optional)
3-4 pcs eggs, bring to boil  - unshell (optional)
Intructions
Heat the oil in a pan and fry garlic till brown.
Add chicken pieces, water, vinegar, soy sauce, onion, bay leaf, black peppercorns and salt. Bring to boil and simmer for 15 minutes.
Remove chicken and let cool. Separate.
Heat sauce, add potato and sugar and reduce liquid. Separate.
Fry chicken pieces until brown and add the sauce and eggs into it. Mix well.
Add salt to taste.
Serve with rice.
