Chia Seeds and Half Marathon Training

Before we get into my volunteer life and training plan, let’s talk breakfast.

A few months ago, I found the bulk isle in United Market Street. I really only planned on buying a big bag of old fashioned oats, but ended up also buying a bag of Chia Seeds on a whim. After using successfully using it as a topping, I decided to venture out to bigger and better chia seed things.

Overnight, Chia Seed Pudding:

  • 1 oz/ 3 Tbls Chia Seeds 
  • 3/4 Cup Almond Milk
  • 1 Truvia Pack
  • Dash of Cinnamon
  • Drop of Vanilla
  • 1/2 Banana
  • 1/4 Cup Blueberries

Method

  1. Combine 1 ounce or about 3 tablespoons chia seeds and 3/4 cup of almond milk in a tupperware bowl.
  2. Refrigerate overnight.
  3. In the morning, add 1 Truvia Packet, a dash of cinnamon, and a drop of vanilla.
  4. Top with half a sliced banana and 1/4 cup blueberries

Volunteering and such…

For the past three days I have let life take over, and let blogging fall to the back burner.

Friday I spent a good amount of my day volunteering at Whispers of Hope Horse Farm. While I was there I exercised and saddled horses so they would be ready for the Wounded Warrior project. I never imagined that I would be able to use my horse experience to serve at a therapeutic riding facility. Here is a little re-cap of my life: I started taking lessons when I was 5 and began showing horses until I was 16. Softball, athletics, and sadly the pursuit of a very social high school life took over. Showing became less of a priority and softball brought me to Midwestern State University where my team went to play in the DII World Series.

I also met my husband on the softball field (he was an athletic trainer one season).

Now that my softball career is over, I feel so blessed to have the opportunity to work with horses again. The women at the facility have expressed so much appreciation, making me feel very helpful, which is the best feeling to have as a volunteer.

Ok, Ok, I think it is finally time to share my training plans. Yesterday was exactly 18 weeks out from the Colorado Colfax Half Marathon, so I set up a running schedule to begin preparing. I know it is a little early, but I am anxious to get my new years resolution started!

My mileage increases slowly because I am beginning so far in advance!
