Cheesy Tomato Basil Sandwich

Good morning darlings.  Sorry, I had been MIA for the past few days, internet connection problems, but today I would like to share with you a super simple recipe.  This is my go-to no-brainer snack which only has four to five ingredients.  I also used to eat this as a meal when I was dieting and it is so filling.  It's like having a healthy pizza.  Let's get started, shall we?Cheesy Tomato Basil Sandwich
First, our ingredients:
1. Cheese
2.  Bread of your choice.  I had white bread but you can also use wheat bread for a healthier version.
3.   Parmesan
4.  Fresh basil leaves

Okay, now, we prep the ingredients.  I got some basil leaves from the garden then cleaned and washed them thoroughly.  Next, I sliced the cheese about 1/8-inch thick.  I did the same for the tomatoes.  I sliced them crosswise with seeds and skin included.  You can remove the seeds if you prefer.Cheesy Tomato Basil Sandwich
Next, as I told you, this would be a very easy recipe, so what we have to do is just assemble our open-face sandwich.  On a piece of bread, add the cheese slices.  I love using quick-melt cheese for this but can also use pre-sliced cheeses of your choice.Cheesy Tomato Basil Sandwich
Next, layer the basil leaves.  This is one of the perks of having a basil plant.  I only have a few basil plants in the garden but they've given me so much leaves for my sandwiches and pizzas this year :)  I highly recommend owning at least one.Cheesy Tomato Basil Sandwich
Next thing you need to do is add the tomato slices.  You can add as much tomatoes as you want.  I usually use one whole tomato for each open-face sandwich.  I love tomatoes! They're good for the skin too.Cheesy Tomato Basil Sandwich
Now, sprinkle the whole thing with Parmesan cheese.  This is optional but I love the sharp flavor of Parmesan and I already have it, so why not use it, right?  It also acts a "blanket" for my tomatoes so they will not burn easily.Cheesy Tomato Basil Sandwich
Now all we have to do is toast our sandwich.  Mine took about 5 to 7 minutes.  Oh, I forgot to mention, I also sprinkled some chili pepper for extra kick and flavor.  I love spicy food so whenever I have a chance to add chili pepper, I add it :)Cheesy Tomato Basil Sandwich
After toasting, I just cut the bread diagonally to create triangular pieces.  Serve them hot so you can fully enjoy the crispiness of the bread and the ooey-gooey cheese.  You can also add drops of hot sauce if you like :)Cheesy Tomato Basil Sandwich
