Cauliflower Rice – An Essential LCHF Side Dish

Do you miss rice on a low-carb diet? Then you perhaps haven't tried the number one alternative.

Here's a great low-carb side dish that goes particularly well with Asian dishes, but can also stand in for couscous or pasta.

Difficulty: Easy
Cooking time: 5 min. Preparation time: 5 min.
8 g carbs per serving.

Ingredients, 4 servings

1 head of cauliflower or 1¾ lbs (800 g) frozen cauliflower
½ teaspoon salt
½ teaspoon turmeric, optional*

* You can, of course, also make the rice all natural without turmeric or add another favorite spice. Try an herb salt, curry or paprika powder.

Instructions

Use a food processor with knife blades.

Cut the cauliflower into smaller florets

Blend half of the florets for 30 seconds and add salt and turmeric. Add the rest of the cauliflower and continue to blend until it becomes rice-like.

Microwave in a glass bowl for about 5-6 minutes or fry in coconut oil or butter.
