Caramel Corn and Grief

Hi every one! I know it has been a few weeks since I have posted.

You see I lost my husband and my life has been kind of a tailspin of sorts.

I haven’t been in the mood to do much of anything except maybe cry.  He died suddenly so it was a shock to say the least.

To be honest I was thinking that maybe I shouldn’t blog anymore. I honestly felt that with everything going on I wouldn’t have the time. Also, I wasn’t sure if my heart would be in it anymore. I talked to my daughter and she said I should continue because it makes me happy. Well, I feel kind of numb right now, but it does feel therapeutic to write about it a bit. She suggested that perhaps I may not have to post as often, but I should continue to do it.

My daughter has been my rock and so supportive in all of this.  I am really so very proud of her.

It is kind of a bummer because my husband was my number one taste tester and he is no longer here to enjoy my creations. Trust me, many people have stepped up to the plate and offered to be my official taste tester.

I honestly feel so blessed to have so many people who love and support me.  My very good friend Carrie has called me or texted me almost every day, just to make sure I was alright. Along with her mom Irene (Granny G) and her sister Chris which I graduated from high school with, have all shown how much they care for me. Not to mention my Saint Pius Peeps, they all know who they are.

Family has been great! I cant tell you how many time Mary (Tims sister) has brought food over and made me eat even though I didnt think I wanted to.

I also had some heartfelt lovely comments and prayers from my fellow Bohos such as Mary and Alice along with other Facebook group friends. Not to mention that I got a few sympathy cards from Liz and Claudia my blogger peeps.

So I may not post as frequently as I did, but I think I will continue to blog because I feel this is a great outlet to express myself.

It will be a while before I feel even close to being whole again but I am glad I have Donna Currie and Claudia Lamascolo to talk to that knows what I am going through.

This Caramel Corn was supposed to be a part of a Super Bowl post, but with everything going on Super Bowl came and went.

So here is my recipe for Caramel Corn, better late than never.

Caramel Corn

Ingredients:

2 tablespoons butter
1 cup brown sugar
1/4 cup corn syrup
1 teaspoon salt
5 cups air popped popcorn
or
2 bags of the microwave stuff
1/2 cup pecans
8 oz white chocolate chips or melting chocolate
1/3 cup tiny M & Ms or Reese’s Pieces

Directions:

Preheat oven to 200 degrees.
In a medium saucepan melt butter and add brown sugar, corn syrup and salt.
Cook on high for 5 minutes until thick and dark amber color.
Place popcorn and pecans in a large bowl.
Add brown sugar mixture to coat.
Quickly and I do mean quickly,
in a single layer spread mixture on a greased sheet pan or silpat.
Bake for 1 hour.
Allow to cook and break into pieces.
In a 3 quart sauce pan, melt white chocolate.
Drizzle over popcorn.
Toss in M&Ms or Reese’s Pieces.
Cool until set.
