I’m pretty sure I ate 5 servings of veggies just in this meal.

I was crazy hungry all morning. I even had a snack which I normally never do between breakfast and lunch.

I finally found a blueberry muffin Larabar! At the strangest place… Target!

Anyways I was so hungry that I made a huge lunch.

I made a super simple salad with broccoli slaw and some bagged romaine. I topped it with Annie’s Goddess.

It was a mountain. Obviously.

Then I made something comforting because it’s really cloudy and cold here today.

I made a serving of fettuccini brown rice noodles. Which is 1/8th of a package. Can someone please tell me how you are supposed to measure out 1/8th of a package?!

Then I added a precooked chicken and apple sausage, some roasted broccoli and onion and topped it with some thyme, garlic powder, pepper and salt.

It was really filling. Not one of my best creations though. I think I’ll skip a formal recipe.

After lunch I had a few bitter sweet chocolate chunks with an unexpected spoon full of almond butter.

I added the almond butter last minute to keep my tummy full this afternoon.

I’m always really hungry the day after long runs. Plus I have an hour elliptical workout tonight since I’m taking tomorrow off (it’s my 25th birthday!) and my Mom, Grandma and I have a special morning and lunch planned.
