Building on a Base

I love lunch at home, so many more options than whatever I decide to bring in my half asleep stupor in the morning. :)  I started today's lunch with a base of Kashi's Frozen Sweet & Sour Chicken.  I like Kashi's frozen entrees once in awhile but they're usually too high in sodium and too light in veggies.  Can't do anything about the first thing but I can definitely fix the second!  Usually I just serve some veggies on the side but today I made a sort of sweet and sour chicken salad with spinach and steamed fresh broccoli stirred in.  The sauce for the chicken served as the 'dressing'.  Much better than just the entree on it's own and the way I'll be eating these from now on!
