Broiled Salmon and Figs Salad

Summer = fresh and light food

at least for me! When it's hot (and it is still pretty boiling here in Shanghai) I like to enjoy an healthy, fresh and energizing meal. Like this salad!

This dish has got everything you need: protein and good healthy omega 3 from the Salmon, good oil from the avocado, vitamins from the blueberries and figs, fibers from the veggies. Could you ask for more?

Let's cook!

Ingredients (serves 2):

  • 2 salmon fillets (140 gr each)
  • olive oil, salt and pepper
  • garlic powder and chili powder
  • 2 figs
  • 1 tbsp. maple syrup
  • 4 cups of chopped lettuce and radicchio
  • 1 avocado
  • 1/2 cup fresh blueberries
  • 1/2 cup boiled edamame

Turn on your broiler.

Sprinkle both sides of the salmon fillets with salt, pepper, garlic powder, herbs and chili powder. Coat the bottom of a baking pan with oil, place the salmon, drizzle some oil on top of the salmon too.

Broil it for 10 min.

Cut each fig into 4 wedges, brush with maple syrup and lightly drizzle with salt. Place them on the baking tray and broil them for 10 min

Lay 2 plates with the chopped lettuce and radicchio, add some chopped avocado.

Lay the salmon on top of the salad, add all around it the figs, blueberries and edamame. Drizzle with a lemon/oil seasoning sauce and serve!
