Blueberry and Coconut Milk Popsicles!

It's hot!...I mean Hot!!...I mean HOT!!!

The 10 min walk from my house to the office was enough to make me pouring sweat! Shanghai can get so horribly sticky, humid and warm in the Summer that even my southern Italian body has issues handling this!

So to cool myself down I made this healthy and super refreshing popsicles! They call for frozen blueberries and coconut milk. I have been obsessed with coconut milk recently...don't ask me why, I go through phases in my life when I can basically have one ingredient in anything I eat, then I'm over it and I completely forget about it...It happened with sesame oil already, remember?

Anyhow, moving to the popsicles, here is the recipe!

Ingredients (makes 6):

  • 2 cups frozen blueberries
  • 2/3 cup whole fat coconut milk
  • 1 tbsp fresh lime juice
  • 1/4 cup honey

Grab some nice honey, I'm going organic for this one an this stuff is from Italy so even better 😉

then take some coconut milk and please don't drink it all... we need it...yes I drank it...

Place all the ingredients into a blender (lime juice, blueberries, coconut milk and honey)

and well, pulse until nice and creamy

Scoop the mixture into popsicles molds making sure there are no pockets of air.

Insert the cover and put in your freezer for 3 to 4 hours (note: you can use fresh blueberries, in this case you need to store in the freezer for 6 hours).

When ready to serve, run the mold under water for 10 seconds and gently slide the popsicle out. Enjoy!
