Birthday Blueberry Pancakes

chi coconut oilYes, yes, I know “Birthday Blueberry Pancakes”, but wasn’t my Birthday back in February? It was, yes you’re right. However, I just have to share my breakfast recipe which I made on my Birthday from our Hemsley & Hemsley book as it was beyond delicious and the smell was utterly heavenly. Also there’s something about the phrasing “Birthday Blueberry Pancakes” which just works, don’t you think? Also the best thing about this recipe (apart from the being insanely good to eat) is that there is no need to flip! Amazing. Ingredients – since they are pretty vital to make these gluten free, dairy free, egg free, sugar free pancakes of heavenly joy. Now to make these bad boys egg free I used an egg substitute in the form of chia seeds, such a useful seed. To make 1 egg via chia seeds 1 tablespoon of freshly ground chia seeds 3 tablespoons of water Whisk together until well combined and place in the fridge to set for about 10-15 minutes Use as you would normally use an egg in the recipe   For two hungry people   Ingredients :: 150-200g blueberries | 2 tbsp Chi Coconut Oil | 2-4 tbsp warm water | 2x Chia egg ...
