Banana Nut Bread…

This is and old standby in my house…for some reason I always have leftover bananas, and this is a super easy recipe that everyone loves. Fresh out of the oven with a big glass of milk or big cup of tea on a cold winters day…truly comfort food :)

What you need:

  • 1 3/4 cups all purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 2 tbsp milk
  • 1 cup mashed bananas
  • 1/4 chopped nuts

What you do:

Stir together flour, baking powder, soda and salt. Set aside.

In a mixing bowl beat sugar and shortening with electric mixer till light, scraping sides of bowl often.

Add eggs, one at a time, and then the milk, beating until smooth after each addition. Add flour mixture and banana alternately to creamed mixture, beating til smooth after each addition. Fold in nuts.

Banana Nut Bread…

Turn batter into a lightly greased bread or loaf pan. Bake in a 350° oven for 60 minutes or until a wooden pick inserted near center comes out clean. Cool in pan for 10 minutes.

Banana Nut Bread…

Remove from pan: cool.

For easier slicing, wrap and store overnight. Makes 1 loaf.
