Banana Bread Recipe with Choco Chips from Georgia

My daughter and I have been making this banana bread recipe with chocolate chips for what feels like years now.

It's a recipe that was shared by my sister-in-law's stepmom who either baked the bread for us as a gift, or perhaps she brought it to a potluck, or maybe it was featured in her dessert bar at her annual Christmas dinner.

Wherever we first tried it, it made such an impression that we've been using this recipe as our own family banana bread since then. I have to admit that I've tried at least a dozen different recipes before this, but this was the one worth memorializing on our family recipe blog.

I feel as though the key to this recipe is the dairy: either sour cream, or I often substitute with greek yogurt since this is what we tend to have in our fridge as a staple. I've even used one of my daughter's mini yogurt cups from Trader Joe's - you know the one, from either the blueberry and vanilla pack, or the mango and peach pack (but oddly we don't buy the strawberry and banana pack).

Whichever dairy you choose, it adds moisture to the bread that would otherwise be lacking if you decide to omit it. So don't skimp on the dairy, or you won't be making Georgia's banana bread! :)

Ingredients:

1 2/3 cup all purpose flour
1 teaspoon baking soda
2 teaspoon baking powder
1/4 teaspoon cinnamon
1/2 teaspoon salt
1 cup sugar ( Georgia uses half-and-half of regular sugar and Splenda's brown sugar blend)
2 eggs
1/2 cup canola oil (Georgia uses 4 tablespoons)
3 1/2 very ripe bananas
2 tablespoons greek yogurt or sour cream (I use whichever I have in the fridge)
1 teaspoon pure vanilla extract
1/3 cup chocolate chips (I like the mini chips best)

Directions:
  • Preheat oven to 350.
  • Coat loaf pan with canola oil spray.
  • Sift flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  • Beat sugar, vanilla extract and eggs till fluffy and light ( about 10 minutes).
  • Drizzle in oil. Add mashed bananas, sour cream vanilla.
  • Fold in dry ingredients. Pour into loaf pan and bake for 45 minutes to 1 hour, until toothpick inserted in center comes out clean, but not more than 1 hour.

We love this banana bread for brunch, or a snack. It's truly our favorite!

And just a quick note about Georgia, and my sister in law's Dad too, but they are the sweetest! I'm so thankful that we've had the chance to get to know them and spend time together as a family. My sister in law is pretty darn awesome too ( in case she is reading this - lol), so great job little bro on marrying this gem! :)

Thanks for sharing your recipe, Georgia!

Happy Summer!!!
