Baked Eggs In Avocado Recipe

I was trying to figure out what to eat one Saturday morning when I opened my fridge and tmy eyes landed on a Hass avocado and two lonely eggs hanging out on the fridge door…so this happened…baked eggs in avocado, savvy brown baked eggs in avocado, savvy brown baked eggs in avocado, savvy brown

Baked Eggs In Avocado

Ingredients

  • 1 ripe Haas Avocado (those are the little dark bumpy ones)
  • 2 eggs (I like using medium)
  • salt and pepper to taste
  • 1 tsp olive oil
  • garlic powder (optional)
  • chilli powder (optional)

Directions

  1. Pre-heat Oven to 425
  2. Cut the avocado in half and discard the seed.
  3. Scoop out a bit of the center of each avocado to make room for the egg white and yolk to sit in. (When scooping, it’s better to go a little deeper than wider)
  4. Grease the bottom of a loaf pan or two oven safe ramekins with oil.
  5. Place avocado halves in pan
  6. Crack each egg carefully and drop the egg, yolk and all) into each well of the avocado halves.
  7. Sprinkle with salt, pepper and other spices to taste.
  8. Cook for 20 minutes or until the egg is fully cooked.

That’s it! I usually season with salt, pepper and garlic powder and top it off with a tablespoon of fresh salsa on each avocado. (This recipe is a great source of omega-3s and protein by the way).
