Bacon and Egg Breakfast Muffins

So after trying this recipe, I promise you, you will swear at me. Do NOT blame me for your high blood pressure, and don’t let your Dad right after he has had a heart attack read this. Mom…that means you.

Super easy, and the perfect Saturday morning breakfast in bed.
 

Ingredients:

For two muffins…

Bacon and Egg Breakfast Muffins

  • 2 eggs
  • 2 english muffins
  • 6 pieces of bacon
  • cheese

Ok…here’s what you do…

Cook your bacon until crispy. While it is cooking, slice your cheese up and get english muffins ready for the toaster. Once bacon is cooked, drain it on a piece of paper towel and warm in oven, don’t throw the paper towel in oven, there will be fire.

I fry the eggs, because that is my favorite way, but you can pretty much cook them however you like, poached would be good too I suppose, I wouldn’t know. I am against poached eggs as a rule, mostly cause I HATE making them…but that is just me :)

Throw the english muffins in the toaster now, you want them ready when the eggs are right? Cold eggs really suck, even more than poaching.

Once everything is cooked you just have to throw it all together, in a Mcdonalds like way. Only delicious. And hot.

Then just enjoy. With a hot cup of coffee. In bed.

Trust me, it’s the best way.
