Arugula Watermelon Salad #InaFriday

This tasty arugula, watermelon, mint and feta salad has the right balance of peppery arugula, sweet watermelon, mint and salty Feta. It is perfect to serve with your next meal as a side salad or as an entree.

It is the first Friday of the month and for Ina Friday I made a salad.  I love this salad becasue it has a awesome combination of ingredients. The flavors go so well together and it is a very easy recipe to put together. I personally think that watermelons are at their best right now. There is no harm in making this in the fall or winter.

Most of the ingredients in this recipe you can get from the regular grocery store. When you get a chance please pay a visit below to all our contributors. I am sure they will appreciate it as well as I do.

Arugula, Watermelon and Feta Salad

Ingredients:

1/4 cup orange juice
1/4 cup lemon juice
1/4 cup minced shallots
1 tablespoon honey
1/2 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
6 cups arugula
3 cups seedless watermelon cut into 1 inch cubes
12 ounces feta cheese
1 cup mint leaves julienned

Directions:

In a large mason jar combine orange, lemon juices, shallots, honey, salt, pepper and olive oil. CLose lid and shake vigorously until combined.
Place arugula, watermelon, feta, and mint in a large bowl. Drizzle the vinaigrette to coat and toss lightly. Taste to adjust seasonings.
Serve immediately.
