For those of you celebrating the Jewish holidays, you are likely familiar with the tradition of dipping apples in honey as a celebration of and hope for sweetness in the new year.
For vegans, honey isn't an ingredient we use, but apples are always welcome. I especially like them sliced and covered in peanut butter! For Rosh Hashanah, the Jewish new year, I am hosting just shy of 30 guests and I wanted to make a dish that would incorporate apples and yet be a savory compliment to the entree course of the meal. The result was a decadent apple and potato casserole.
