Acorn Pie

I don`t know what you guys think but in my opinion I think pies can fir the bill and be a great host in almost any occasion. This acorn pie is just the perfect example of what I am trying to say. Honestly for those of you who have tried this recipe will know what and why am I talking like this about this acorn pie recipe! To top it off kids just love this recipe. Plus it is the type of healthy lunch ideas recipe that can be made with little effort and time but at the same time tastes divine. Give it a try and let me know what you think about this acorn pie recipe.

Ingredients:

  • 3 egg whites, beaten stiff
  • 1 tsp baking powder
  • 1 cup sugar
  • 1 tsp vanilla
  • 20 soda crackers
  • 1 (coarsley broken)
  • 1/2 cup pecans, chopped

Directions:

  1. Beat egg whites until stiff; add baking powder and beat more.
  2. Add sugar and vanilla; beat again.
  3. Fold in crackers and pecans.
  4. Put in buttered pie plate and bake at 300 degrees for 30 minutes.
  5. Let cool and top with Cool Whip and chopped pecans.
