a Snow Day & a {healthy} Hot Chocolate Recipe

My sweet Henry has been asking for snow since the last big event we had in Dallas 2 years ago. 

So, needless to say, he was ecstatic to wake up to discover snow covering the ground.  It wasn’t much, but enough to play in for sure!

I bundled the baby so much that the poor guy could hardly sit up, which made him more frustrated than anything, but we still had fun introducing him to snow for the first time in his little life.

Once he was down for his nap Henry and I spent another hour throwing snowballs, making snow angels, and sledding down the neighbor’s hill.

Afterwards we came in and I warmed the hot chocolate I had prepared before we went out.

Lindsay’s {Healthy} Hot Chocolate

      • 32 oz. milk (I used whole raw, but any milk should work just fine – including coconut, almond, etc.)

heat on med-low in a saucepan until warm, and cover to avoid getting that “skin” on the top

while the milk is heating, make the syrup:

      • 1/2 C. organic cocoa

      • 1/4 C. raw local honey

      • 1/2 tsp pure vanilla extract

      • pinch or two of unrefined sea salt

once the milk is warm, whisk in the syrup until well incorporated.  heat through and cover, turning the heat to low.

We happened to have some all-natural marshmallows that we toasted as well.

Henry was exhausted and wanted to watch a “resting movie” so we snuggled up to a few episodes of “Little Bear”.
