8.0 A Noste, 6 bis rue du 4 Septembre (short history lesson - the 4th of September 1870 followed the capture of Napoleon the 3rd and was the start of the 3rd Republic) in the 2nd, 01.47.03.91.91, (Metro: Bourse), is Julien Deboué's third great place following Afaria and Dans Les Landes.  You come up the street and the awning is like a hundred other red ones, but the barrel has an ardoise featuring Taloa - Whoa - Taloa - those corn tortilla things made 100 ways? - Goodness Gracious - there's an actual Taloa Truck inside the place - and a chalkboard over the bar with numerous wines - where are we?

OK, the little memory chip in my head says - "Rez-de-chausee" (US First) floor tapas, taloa, wine, tables/bar stools/tables d'hote; second (first here) floor real seating with fixed menu.  Off we go with amuses of bread with jamon and huge wooden kebab/toothpicks with beet/foie gras stuck in lava stone with a fabulous sauce and a Naan-type bread - heaven and plus.

Then came a timbale of beef-steak-tomato tartare with basil and pineapple tomato; cepes with bacon powder and a baba of rum like I've never had before (and he'd never served to customers before he said) and then a plate that looked like pieces of some video game or mustardy-mini-M&M's on it, wha's up here?

Ah ha - like at those pseudo-wild African camps where they come over and slice you a giraffe leg, elephant snout or crocodile tail, here they slice up fabulous beef, veal with a bacon/ham taste and pork with a spicy rub to your liking (portion and cooking wise) from a rolling cart with

some terrific raw vegetables and rough cut fried potatoes (this guy has really got the touch.)

So, for dessert they bring over this really boring looking vanilla bloc, ho hum, but then you cut into it and it's pure heaven, an almost bread puddingish interior - and with coffee, some sort of roasted things and a chocolate candy.

At this point what can surprise me?  I've already had a very reasonably priced wine, a Gynecologist's tweezer to pick my bread and the meat as it's sliced and a bathroom whose colors are reminiscent of Peter Max's Fillmore West posters.

Our bill, now disclosure, I was with a dear friend of the house and I am also known to them, so our coffees and one rosé apero were offered.  Otherwise it was 117.00E with a bottle of Chateldon.  dB level 80.

Go back?  We, Colette and our downstairs' neighbors will be here October 6th - join us.  I have rarely had such a satisfying meal.
